Chicken Salad Spinach Wrap

Prepare a simple chicken salad either with leftover chicken breast, rotisserie chicken or precooked chicken dices/strips. Combine with light mayonnaise, chopped vegetables (whatever you have on hand – celery, red or green bell peppers, cucumber, tomatoes, shredded carrots, etc) and dried basil or oregano. Serve in a reduced-fat tortilla lined with fresh spinach leaves.

Pasta Salad

Make a homemade pasta salad with whole-wheat pasta, your favorite veggies (such as chopped broccoli, cauliflower, cucumber, zucchini, carrots, celery or bell peppers), and toss with some lowfat Italian salad dressing, and optionally a few cubes of lowfat mozzarella cheese.

Mock Rueben

Layer 1 tablespoon reduced fat Thousand Island dressing, thin sliced turkey breast (3 ounces), reduced fat swiss cheese (such as Kraft Free) and sauerkraut on rye bread. If near stove or toaster over, you could toast the bread with a little butter or cooking spray until lightly browned and cheese is melted. (To reduce fat even more, use a fat-free thousand island).
